Cranberry-Orange Nut Bread
Karen's Cranberry-Orange Nut Bread
Ingredients:
2 cups whole wheat or unbleached flour
- 3/4 cup fructose or honey - OR- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 3 tablespoons canola oil
1/2 cup orange juice
- 1/4 cup milk
- 1 egg or 2 egg whites
- 1 1/2 cranberries, chopped (this is fresh or frozen.) If you use dried, then you may want to reduce the amount by 1/4 to 1/2 or else it may be too tart.
- 1/2 cup pecans or walnuts, chopped
- 1 teaspoon finely grated orange zest
Directions:
- Preheat oven to 350 degrees.
- Grease and flour a 9x5x3-inch loaf pan.
- In a mixing bowl, beat together oil, orange juice, milk, and egg. If you are using honey, then add it here. Mix well.
- To the wet mixture, add the flour, fructose, or other sugar (if using), baking powder, baking soda, and mix just to moisten.
- Fold in cranberries, nuts, and orange zest.
- Spoon into prepared pan. Bake an hour approx. or until a toothpick insertend intothe center comes out clean.
- Cool on a wire rack 15 minutes before turning out. Then cool completely.
