WOW! 30 pounds of bananas for a buck!!! I would have been all over that too!!
these are a favorite here:
Banana Refrigerator Cookies
1 cup butter or margarine
2 cups granulated sugar
1 teaspoon vanilla extract
1 cup mashed fully ripe bananas (approx. 3)
3 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1. Cream together butter, sugar, and vanilla. Add bananas and beat until well mixed.
2. Combine flour, baking powder, and salt.
3. Add flour mixture to banana, mix in slowly to avoid getting flour everywhere.
4. Spray pans with non stick cooking spray (or use oil). Portion dough on to sheets. Wet hands or bottom of a glass. Flatten slightly.
5. Bake at 375 degrees F. for about 10 minutes, or until edges begin to brown. Cool on wire rack.
**This is not a typo... this recipe does not use eggs. If you use margarine it can be vegan. **
This dough can be frozen for later use. Wet hands and spread dough on to waxed paper and roll up into logs. Then wrap in plastic wrap or foil before freezing. The dough will still be sticky/tacky when frozen. To use cut pieces off with a wet knife and bake the same as above. No need to flatten them if you cut slices w/ the knife though.
Thinner cookies will be crispier, thicker ones will be chewier.
