Question So Meeshi......

what is your breaded tofu square recipe??

I know my head started spinning after a few pages on the other thread, and I (plus others I saw) would like to give it a try!

"The breaded tofu is easy. Buy the tofu that comes in water, I prefer extra firm. Drain tofu and wrap in paper towels and squeeze gently to remove moisture. Cut into cubes approx 3/4 inch by 3/4 inch. Melt a bit of butter in a skillet and when it's melted, toss in tofu squares to coat. Sprinkle seasoned breadcrumbs, toasted wheat germ and nutritional yeast and stir gently to coat. Cook until golden brown on the outside." ~Meeshi

I'm not meeshi but i thought you might like another version of breaded tofu too. It is also wheat and gluten free.

Freeze extra firm tofu, thaw and press out liquid. Cut into slices and spray with brags liquid soy. Bread in chickpea flour put in a pan with sesame oil. I like garlic and onion on top.You can also sprinkle with sesame seeds. Spray a little more brags on the tofu slices. Broil on low for 10 min each side or until crispy

Warning; You will not be able to stop eating this it tastes so yummy. I ate the whole block yesterday :-)

Oh yum!!!!! I seriously think I am somewhat addicted to tofu! LOL I am going to try these recipes.

Here's what we do (the kids LOVE these, and dip them in ketchup sometimes, like "nuggets").

Drain a block of firm or extra firm tofu (between 2 plates for at least 30 mins). Cut into rectangular "nugget" sized pieces. Roll in a beaten egg, then seasoned bread crumbs. Bake at 350 for 20 min's or so. Tofu nuggets!

Ok.....silly question

What IS tofu? A plant?

Is it readily available at places like Safeway? (limited shopping)

Is it something you keep in the fridge? Do you have to cook it up the day you buy it? (how perishable is it)

If I can find the stuff, I may try it.

Tofu is bean curd. So yes, it is plant-based. It's also a complete protein, one of the few in the vegetarian food world.

I don't know if you can find it at your local supermarket, but it is becoming more readily available. Most places have it either in the produce section or by the dairy/eggs section. The packages come with an expiration date on them, and you should store them in the fridge. You can freeze it to give it a firmer texture. You generally want the extra firm tofu for these kinds of recipes. The softer/silken stuff is good for whipping up in smoothies.

I MUST say THANKYOU Meeshi!!! I have finally found a way to make tofu that DH will eat...and he ate it like it was the best thing in the world!!! I am so excited...now to find other yummies he will eat made with Tofu

Michelle, I know our local Safeway has tofu in the produce section. At ours it's near the bag-o-salads. They also have meat substitutes in the same section - products like "Gimme Lean" sausage, tofu dogs, Yves slices (like lunch meat), etc. So look for all that stuff and you'll find the tofu.

You might also check near the Asian produce. Our Fred Meyer keeps half the tofu there, with the bean sprouts, whole peas, fresh ginger, bok choy, etc.; the other half is in a cooler over in the health food section.

I printed this one out and will try it next time I buy Tofu. It's hard to find good wheat/gluten free recipes out there so the kids don't feel like they are missing out.

I found a great Ginger Cookie wheat/dairy free recipe today I plan to try. Looks like it has the same ingredients as the Pamela's Ginger Almond Cookies.

My kiddos can eat a whole box if I don't ration those expensive puppies out. lol

Ok call me blonde for a moment....but do you coat the cubes in the mixture first, then "fry" them in the pan, or do you just dump all the breadcrumbs on top of the tofu squares in the pan already??? I am a little confused

I am *lol* at a thread titled "So Meeshi" having 247 views... :snicker: It just struck me as funny...

Jessica, when I make it, I do it just like the directions say. First toss the tofu in with the melted butter, so it all gets coated. Then dump on the breadcrumbs, and toss again. It always seems to coat just as well that way, and it's not as time consuming as coating each piece in a separate bowl and then putting them in a pan.

Sarah, you are so welcome!!! That makes me so happy to hear that! Our family really gobbles tofu up when cooked this way!

Melissa, that Gimme Lean sausage is pretty yummy... Now I'm craving an egg, cheese and "sausage" burrito...

Thanks for the recipe...I have been looking for some good tofu and tempeh recipes...and I found a yummy tempeh enchilada recipe, but could not find one for tofu...now i have one!

Hey ya Jess!

Winco has nutritional yeast in the bulk foods section. It's a natural yeast really high in B vitamins if I'm not mistaken.

I put some on our popcorn (after the FATTY butter of course).

I have a rice crisp treat recipe that is wheat/gluten free if you are interested and a banana muffin recipe that worked okay. The rice crisps are made with rice syrup and almond butter. yum. lmk if you want me to send you the recipes.
