Hi mamas...long time no post & I'm in a cooking rut..lol!

Hello ladies! I hope everyone is doing well. I check in often, but don't have time to post usually. I was hoping we could all share some of our favorite recipes because I am in a serious cooking rut. We eat the same things over and over and I need some inspiration. For intance, this seems to be what our rotation is like: king ranch chicken, chicken spaggetti, tacos, pot roast in the crock pot, tuna salad, chilli, and on occasion shelton's turkey dogs. As you can see most of these are quick and easy so I would like to stick to that theme Thanks for sharing mamas.

Hey I was just thinking about you!

try baking several potatoes at 400 degrees for 1.5 hrs. Slice them in half and put just about anything on them. Save a bunch of cooked ones in the fridge and they are a quick and easy meal with just about anything on them.

I like white flakey fish like red snapper, talapia or sea bass. I like to buy those Far East boxes of Cous Cous or Rice Pilaf. You can put this on to cook, throw the fish in a lightly oiled skillet with a lid and toss a salad all in about 25 min.

Or how about pasta alfredo? buy some premade alfredo sauce out of the cold deli section in the grocery store. while you're cooking the pasta, throw a bunch of broccoli in there and you have broccoli and past alfredo.

I don't make anything that takes longer than 25 min. unless it's in a crock pot.

Here are a couple of my family's favorites.


Cornbread Burger Bake


1 egg, beaten
1/2 cup cornmeal
1 teaspoon baking soda
1/2 can (1 cup) cream-style corn
1/2 cup milk
1 tablespoon oil
3/4 pound ground beef or turkey
1/2 cup chopped onion
1/4 cup chopped green pepper
1 teaspoon chili powder
1 cup grated cheese

In a bowl, mix the egg, cornmeal, baking soda, corn, milk and oil. Set aside.
Cook the ground beef. Drain the fat.
Mix the onion, green pepper, and chili powder with the meat.
Pour half of the cornmeal mixture in to a greased 1-quart baking dish.
Cover with the meat mixture and the grated cheese.
Pour the rest of the cornmeal mixture on top.
Bake in oven at 375 degrees for 30 to 35 minutes.


Garlic Brown Sugar Chicken in the Crock Pot


Chicken- can be pieces, legs, breasts, or thighs

1 cup brown sugar
2/3 cup vinegar
1/4 cup lemon-lime soda
2-3 Tbls minced
2 Tbls soy sauce
1 tsp cayenne pepper

place chicken in crockpot. Mix remaining ingredients and pour oven chicken. Cook on low for at least 6 to 8 hours.

Serve over rice or noodles

Enjoy!
