Couscous recipes?

I like couscous so I bought some--now I need some recipes! Anyone have some good ones? No nuts or raisins, though, preferably. Thanks!

I like to make a tabouli like salad out of it w/garlic lemon juice, olive oil herbs etc.

I'm going to make spicy vegatable couscous this week. Just saute some chopped zucchini and yellow squash, add chopped tomato and a can of chickpeas, and season with cumin, red pepper flakes, coriander, salt and pepper. Cook your couscous in chicken or veggie stock with a little allspice, and combine with the veggies. You can top with scallions or mint or parsley, however you like it. Play around with the seasonings and veggies to taste!

my favorite way to enjoy couscous is cooked in chicken broth (or veggie broth) and then to add freshly grated parmesan cheese (as much or as little as you want!). I like it by itself, but dh prefers to add a meat.

Glad you asked for recipes.....

I always make it plain, with water, salt and butter in my rice cooker and other than the butter.....it is pretty plain. (we had some last night with bbq baked chicken wings and swiss chard)

Thanks everyone! Since summer's coming the salad type thing sounds especially good but it looks like it's pretty versatile and I'll be able to do a lot with it (I bought a "jug" of it).

You can also bring milk and raisins or currents almost to a boil with some cinnamon. Add couscous and let it absorb the liquid. It makes a yummy dessert.
