Wanna know what Dh and the kids snarfed in one day?

I got that word (snarfed) from Marcey (Blueladybug). She used it in one of her posts once and I thought it was funny. I know this goes in the food forum, but I there's more readers here and somebody might be looking for a quick little something special to go with dinner tonight. My dh would die if he knew he was eating garbanzo bean flour...but since I didn't tell him-I came home from work and the whole cake was almost gone. I figure it's healthier than a pan of brownies..

Carrot Cake

1 cup of white flour
1/3 cup Garbanzo bean flour
2/3 cup rye flour
2 cups of sugar
1 tsp baking powder
1tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
3 cups of grated/shredded carrots
1 cup applesauce
4 eggs

Heat oven to 350. Mix everything together in a bowl and pour into a greased pan. I used 8x11. You could make 2 8" rounds if you wanted. Bake until done. It took about 30 min. for mine. I sprinkled a little powdered sugar on top.

(You could experiment with the flours, that is just what I had on hand. I used that white, refined sugar...lol. I'd like to find a substitute for that. Next time, I think I'll add some raisins.)

oooo - that sounds yummy! I have rye flour! And all my rye breads just don't come out how I'd like them to. Hmmm...

I wonder how this would taste with turbinado instead of white sugar. Can you subsitute those exactly, or would the measurements be different?

Yep, I use that word all the time! I didn't realize it till I started hearing my dd say Snarf. It sounds really funny from a 4 year old, "Oh wow, the cat just snarfed up a bug!" or "Mum, I'm so hungry, I could snarf up a whole tofu factory!"

Your recipe looks scrummy (another word around here). I'll bet I can modify it so it's gluten free. Then my dd can snarf it right up! As for the sugar, use honey (use 1/2 the amount of honey you would regular sugar) or, if you're really into cutting out refined sugar, use date sugar. It's dried dates that are ground up. Nothing else.

Thanks for the laugh. I don't usually come to the market board, so I just happened to catch your post. I'll bet it was your word choice that made me open the thread.......
