my dad used to just do raw tomatoes, raw jalapeņos, raw onion, and a tiny bit of bell pepper (but he loved bell pepper. Mash a few heads of garlic, add salt, and put in as much cilantro and lime as you like. Let it sit -- he liked to put it in the sun, where it would heat up and sort of cook just very slightly

I just throw together anything that I want in my salsa (red onion, black beans, etc) with a touch of oil (sort of binds it together a bit), cilantro, vinegar, lime juice and of course plenty of tomatoes. you really can't go wrong!!! Unless you are looking to mimic the cooked versions in a jar at the store. Then, I can't help you. Not sure about those. Just raw ones are easy peasy! Start simple and go from there!!
