Left over beef roast ideas?

What else can I do with this leftover beef roast? We had it the first night w/potatoes and veggies, we've had some as beef & noodles. What next? It was a really yummy roast and there's still quite a bit of broth with it.

make lettuce rolls with the beef, green onions, some soy sauce, a little ginger and garlic - have with rice and asian veggies

pot roast nachos are most excellent :-)

mix with cheese, fine chopped onion and celery, stuff into crescent roll dough or bread dough and bake to make yummy cajun stuffed bread

french dip sandwiches

soba noodles (or any kind of noodles if you can't get soba), leftover beef, frozen edamame, yellow bell pepper, green onion, soy saucea cashews for a warm noodle salad

mix with tomatoes, onions, black beans, corn and bell pepper, pour into a glass baking dish, mix up some corn bread with cheese in it and pour over top and bake for a mexican cornbread

I make shredded beef enchiladas.... just take the roast and pull it apart.... simmer it in some enchilada sauce for a while and make those enchiladas. Really good.... mmmmm

I freeze leftover roast beef when we don't have a lot left and make quesadillas at another time. We had them last night and it's my family's FAVORITE meal. Tortillas in a frying pan with hot oil, shredded cheddar, small diced roast beef and another tortilla. Fry, flip, fry then serve. Add the "fixings" of sour cream, salsa, guacamole and then a salad on the side and you're set.

Well, we did hot beef sandwiches last night w/hard rolls. I've STILL got roast beef left! So I threw it in the freezer and I think I'll try doing quesadillas another time. Thanks for all the ideas!
