apple recipe
Just thought that I would share this one that I got from my granma years ago.
Apple knobby cake
3 Tbs. butter, melted
1 cup sugar
1 egg, beaten
1 tsp. vanilla
1 cup flour (regular or whole wheat both work well)
1 tsp. baking soda
1/2 tsp. each cinnamon, nutmeg and salt
3 cups of diced apples, too small
1/4 cup of chopped nut meats if you like them.
Mix the butter, sugar, egg and vanilla together. Add the flour, soda and spices to the bowl and mix well. Then fold in the apples and nuts.
Bake at 350 F in a 9" square pan or a 7 by 11 pan for 40 to 45 min. Serve warm or room temp.
I like to put a little vanilla ice cream on it for a real treat.

Dicing means to cut into cubes. For this rec. you need to make the dice about 1/2 an inch. HTH.

3 cups of diced apples, too small
What did you mean by "too small" for the apples?

Try to keep the size between 1/2" and 3/4" so you have bits of apple to bite into when you eat it. Much bigger and they may not cook through in the amount of time it takes to bake the cake part. If you get them too small you end up with little pockets of apple sauce. HTH

I lied. I'm not making it Thursday.
It is in the oven TODAY! I can say that the batter is very yummy. Will update in about an hour and a half (after dinner).
