yummy gfcf cheese sauce

This is so yummy that regular people like it.

1/2 cup cooked carrots
1/4 cup corn starch
1/4 cup nutritional yeast
2 teaspoons salt
2 teaspoons garlic or onion powder
1/2 cup Vance's Dari-free or rice milk
1 1/2 cups water

Put it all in the blender and blend until smooth. Pour into sauce pan and whisk over medium heat until it thickens. Use on pasta, pizza, baked potatoes, etc. Add some chipoltle peppers, jalepeno peppers, or salsa and use over tortilla chips like nachos. I love this for mac n cheese with Tinkyada elbows, mmmmm.

Thanks for posting this! I will be trying it soon. We often use The Uncheese Cookbook (and love it!), but this will be fun to try for a change.

or tapioca starch or arrowroot starch, any kind of thickener. I have met meribeth. I love guilt free recipes. Any one else got a good gfcf soy free "cheese" recipe? I also have a ranch dressing/dip recipe if anyone is interested.

PLEASE post the ranch recipe. I miss it SO MUCH!

I trialed dairy this weekend. My reaction was mild, but noticable. Huge improvement for me, shows my gut is healing. So I'm happy but I'm not going to try it again for quite a while.

Ranch dressing

1/2 cup milk sub
1 tblsp corn starch or other thickener.

Dissolve cornstarch in a little water and add to milk sub in sauce pan over medium heat, stir until thickened. Cool in fridge until cold.

1/2 cup mayo
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 tsp parsley flakes
1 1/2 tsp lemon juice
the above mixture

Put in blender and blend until smooth. You can adjust the seasonings to your liking and add nutritional yeast flakes for a cheesy flavor. If it is too thick add more milk sub. You can even add italian seasoning and butter sub and pour over pasta like alfredo sauce. I like rice milk best for this recipe.
