Talking Help a meat fiend go without!

I love meat. All kinds. DH has expressed interest in doing most of the dinner meals meat-free
I'm okay with it, I need to lose weight anyway
Do you have any links or recipes for us to make meat-free meals? We live in an area that does not have a Whole Foods, so nothing too fancy
I would really appreciate any help at all!

i am getting ready to go vegan (dean ornish program) and dh and i both love us some meat (and cheese, and sour cream and ice cream) :-)

some things i have made that my skeptical hubby will eat, as well as just ideas in general that i've been brain storming:

veggie crumbles - you can find them at Kroger in the freezer (morningstar farms or boca) or in the produce section with the veggie cheese - smart ground brand i believe - i just got a pack to try but the morningstar farm ones get a thumbs up from both of us. add them to chili, sloppy joes, pasta etc.

veggie chicken patties - we like the chicken parmesean flavor - i bake bake them with a spoon of marinara and a sprinkle of cheese (or veggie cheese) and put them on a sandwhich bun

soup and salad

veggie chicken nuggets (haven't tried them yet - another purchase i just made yesterday)

silken tofu mixed into casseroles - if i can hide it then i can eat it, i haven't worked up a taste for firm tofu...it is mostly a texture thing.

veggie pasta dishes - lots of whole wheat pastas now have protein, or in asian stirfry peanut sauces are good and toss in peanuts for extra protein
