Oh that tuna with feta that I posted on the other thread had had a little oregano in it too, i forgot!I have also seen cuckes hollowed out and tuna salad added to them
Tzatziki sauce of course (cucumber yogurt sauce), also raita is a variation on this. Cucumber and cream cheese sandwiches (you can add dill or use flavored cream cheese for variety). I love cucumbers and homemade ranch dressing. My mama always just cut either them alone, them with tomatoes or onions or both and tossed with a little vinegar, a dash of sugar and a dash of salt and pepper. You can also use rice wine vinegar and red peppers. I have had a sort of salsa made wih diced cukes, red onion jalapenos and tomatoes,and a variation with scallions (my mom made this because it was all stuff from the garden). I can't remember what you use to bring it all together though? Maybe lime juice?? I want to say it had cilantro in it as well, and maybe cumin???
Cucumber is suprisingly good with watermelon (I like it as a salad with a teeny bit of balsamic vinegar and feta cheese, but this may be weird LOL). It is a fruit after all though, and most similar to melons, so it really does complement them well IMO. My gma made some gelatin mold thing w cucumbers but it was pretty nasty LOL. I think in the 50's they believed everything could be made into a gelatin mold, and for some people that idea never really went away LOL. Oh oh! Greek salad! LOTS of cucumber, and a homemade dressing!
Ok, thats all I can come up with right now-- I AM craving cucumbers now though! Oh and i can't eat them warm-- I have seen them served warm before, but it is just NOT for me!
