Corn Dog Muffins (vegan and veg version work great)

I was getting tired of paying $4 a box for Morningstar Farms veg corndogs, just to have the kids go through 2 boxes in one sitting.


Sooo.... I diced 4 smart dogs (I'm sure regular hot dogs would work just fine), and made up a batch of cornbread batter (did one batch vegan, and it was just as good). Stirred in the diced smartdogs.

I then put about 2 tbsp of batter into each of the 12 greased muffin tins. Squirted in a tsp or so of ketchup. I added a little mustard to mine, but not the kids' because they don't like mustard yet. Topped them off with the rest of the batter, and baked like regular corn muffins.

The kids ate the first dozen and wanted more. I took some to the neighbor's house, and her kids all approved, too.

Here's the recipe I used for the cornbread part - it's a sweetish one, just like the corndog coating:

1 cup ww flour
3/4 cup cornmeal
1/3 cup sugar
3 tsp baking powder
1/2 tsp salt
1 egg (egg replacer worked fine)
1 cup milk (soymilk worked fine)
2 tbsp oil

The usual instructions: mix the dry ingredients, beat the egg/egg replacer, add milk and oil, stir in the dry ingredients. Then, of course, you'd stir in the diced hot dogs/ veggie dogs.

I baked at 350 for about 18 minutes. Makes 1 dozen.

Patrick is totally satisfied, and he's my picky one AND my corndog addict.

If I can figure out how to sneak some veggies in (maybe shredded yellow squash?) I'll update. They'll eat their veggies on the side just fine, but it would be interesting to see if I could up the nutritional value here.

I tried this recipe two days ago using the soymilk and egg replacer and it was really good! My kids give it a thumbs up. Thanks for posting it!
