Super Simple Fajitas:
I cut chicken into strips. Saute' on med high until tender brown in grape seed oil and sea salt. Then I take the chicken out of the pan, and add a large onion, chopped into large peices (slivers) and a large green pepper (same as the onion). Then I add pepper, and saute' until they are tender. Add the chicken back into the pan and a can or two of black beans (rinsed) and that is it.
Afterwards I add tomatos, cilantro, sour cream, and roll it all up in a tortilla, but for the cooking that is all I do, and they always turn out perfect. Add that to a side of yellow rice and you have a large wonderful meal. (That is pretty quick too)

Chicken and Mushroom Rice:
I saute chicken with salt and pepper in oil. Add 3 cups COOKED brown rice (with wild rice added if you have any) and a can of cream of mushroom soup. Add water if it looks too thick. Mix and cover. Simmer for about 20 minutes and add salad on the side. Good, quick, CHEAP meal.

Chicken and Taragon pasta:
Make a white sauce (a roux; which is 2 T of butter, melted and then added 1 to 2 T of flour in and mix until slightly brown. Then add a cup of chicken broth, a cup of milk, and some salt and pepper, and that is a basic white sauce). Add a handful of fresh parsley and fresh or dried tarragon into it.
Make up chicken breasts cut into strips, (I would just saute' with oil and salt).
Toss it all with linguine and serve with cheese bread.

Tacos are always cheap and easy. Burritos too... um... stir fry... I use broccoli, celery, carrots, water chestnuts, bamboo shoots, and anything else I have lurking that may taste good (like this time of year I add zucchini and onion). Season with soy sauce or salt and ginger. I sometimes will grab a can of coconut milk and some curry powder and make a really thick veggie curry too. Put over white rice. Yum.
