What can I do with all these jalapenos?

I have an abundance od jalapeno pepers. What can I make with them?

My dad always chops them up, then freezes them in ice cube trays. Really easy to just pop a few cubes out to put them in chili or whatever.

A friend of mine splits them down the sides. Stuffs them with Cheddar cheese, and then rolls them in a cheddar and sausage mix, bakes them—they are to die for!

To make the sausage/cheese mix, just buy a tube of breakfast sausage (like Jimmy Dean) and mix it with cheese, a few tablespoons of bisquick. Roll it out like cookie dough and roll each jap in it like a pig in the blanket.

You can freeze the whole pepper - no chopping or dicing necessary.

Do you have any good recipes that use lots of them. We have a few plants that are prolific. I gave almost all of them away last time. Now I have more than I could use even after freezing some.

I love jalapeno poppers! Here's a recipe - I haven't made this one (I can't have dairy right now) but it is rated well. I know you can buy them frozen so maybe you could make some up and freeze them and then pull a few out at a time to bake. They aren't exactly health food, but they are good!

Also, sometimes I buy little cans of diced jalapenos to use in mexican food - I am pretty sure they are preserved in a bit of vinegar - though they aren't really "pickled". That's another idea.

thanks for the ideas...I ended up slicing and sauteing (sp?) them with onoins and garlic, then freezing for chili etc.
