I layer potato slices, chopped onion, chunks of ham, and shredded cheese in the crockpot (keep repeating the layers until it's almost full). Then pour on a little milk or cream of mushroom soup, and cook on low all day. It's really good when it's cold out.
My mother makes a breakfast casserole with hash browns, ham, cheese, and eggs all mixed together and baked in the oven. It's kind of like this one:
