What's your favorite potato recipe?

We're in one of those 'let's make what's in the pantry and freezer last until next week's payday' zones. Thankfully, we're pretty well stocked with staples.

I have a couple of bags of potatoes and we're tired of our same old recipes. I'd really appreciate it if you'd share your favorite potato recipes - or links.

Our motto is: As long as we have potatoes, we'll never starve!

Thanks! I'll share one that my wf/gf son loved for breakfast this morning. I don't have exact measurements, though:

Dice onions and potatoes into very small pieces. Cook in small amount of canola oil until done. While cooking, add a can of black beans, some turmeric, paprika, and cumin. Also sea salt and pepper to taste.

These were really yummy!

Talk Kelly (<-- Her user name) into giving you her potato soup recipe, Her's is to die for!!! Oooh Cami's (Thmom) is good too! I really have a thing for potato soup can't you tell.

Here's my Potato and Onion Bake recipe: there's a lot of room for adjustment according to personal preference!

Grease (or spray with Pam if you use it) a casserole dish - size is up to you, I usually use a larger than 2qt size

Peel and slice potatoes into dish, layering with sliced (and then separated into rings) onions

Repeat layers as often as you want (I usually end up with two layers of each, with the onions on top)

Melt 1/4c butter (though, I admit, I usually use 1/2 cup) and add: 1/4tsp pepper, 1/2 tsp salt, 1/4 thyme and 1/8 oregano

Drizzle butter mixture over potato layers

Cover and bake at 450. Usually takes an hour or so - depends on how thick your potato slices are.


It doesn't really sound like much, but it is tasty! It's quick and easy to make, too. I like to serve it with my broccoli-cheese soup, but have lately been told by DH and my mom that the two "don't go together" so I will have to find a different main dish.

My family likes canned chili and cheese on baked potatoes. Also, if you like chicken, a can of chicken soup (use half the amount of water or milk so it will be thicker) with some chicken breast in it over mashed potatoes is good. Toss some of those crunchy chinese noodles and some cheese on top if you like.
