Question What do I do with all these pumpkins?

The neighbor brought me 3 large pumpkins and now I'm looking for something to make with them.

I plan on cooking up one or two pumpkins then freezing them to make pumpkin pies with this winter.

What do I do with the other one? Any suggestions?

One Thanksgiving my aunt made baked pumkins. They were really yummy. I'll see if I can find a recipe. Hang on.

Pumpkin cake...pumkin muffins...pumpkin bread...YES!

Thanks. I never made anything with pumpkin except pies before. Never thought about cake and muffins and all that other stuff. Thank you.

just had to laugh at your title cuz it made me think of my youngest dd's and my fav book to read together: Too Many Pumpkins by Linda White Love the story and the illustrations.
So, just for fun I'll tell you what "Rebecca Estelle" from the book made with her pumpkins:
pumpkin pies, pumpkin tarts, pumpkin muffins, pumpkin cakes. Pumpkin bread, pumpkin pudding, pumpkin cookies. also jack-o-lanterns and roasted pumpkin seeds
Fun book to read at this time of year.

I love to bake pumkin just like you would a squash. Halve them, scoop out the inside, and put a mixture of butter and maple syrup inside, or a mixture of butter, brown sugar and walnuts. They are really delicious. I am trying to remember temp, etc.. . . I think 425 about 30-40 min until tender. Beware of using non stick pans with squash. Cooking pumkins took the coating off mine.
