Cavatappi with Spinach, Beans, and Asiago Cheese

8 cups coarsely chopped spinach leaves
4 cups hot cooked cavatappi ( about 6 ounces uncooked spiral shaped pasta)
2 T olive oil
1/4t salt
1/4t pepper
1 (19 oz) can cannellini beans or other white beans, drained
2 garlic cloves, crushed
1/2 C (2oz) shredded Asiago Cheese
Freshly ground black pepper (optional)

Combine all ingredients in a large bowl and toss well.

If you put the pasta and cheese on the spinach while it is still warm, the spinach will wilt and the cheese will soften.

This is one awesome salad!! And if works great for leftovers!

Asiago is a hard italian cheese. You can sub parmesian for it. Asiago is a bit more strong flavored than parm, very yummy!

asiago is one of my favorite cheeses (runs a close second behind bleu cheese)! I always have some I don't have any fresh spinach though, but I will pick up some this week to make this yummy recipe!
