Question Do you have a recipe for Broc/Rice/Cheese Casserole??

We had this a few months ago at a church potluck, and I am totally craving it.

It tasted like it only had broccoli, cheese, and rice in it. (I'm sure other stuff, but those were the main ingredients)

Does anyone have a recipe for this??? PLEEEEEEEEEEEEEAAAAAAAASSSSSSEEEE?

Well....here's how we make it. My kids call it broccoli cheese rice and they love it.

Cook your rice however you do.

I make a white 'sauce' with milk, flour, salt and pepper then add whatever cheese I can spare--usually some cheddar and lots of colby jack. Dice up broccoli or use frozen diced if you're lazy like me put the rice in a buttered caserole dish add broccoli and toss a bit, then cover in the sauce. You can save some cheese aside to sprinkle on the top near the end if you'd like. Oh....350 for maybe 20-30 mins?

Um....sorry for no 'measurements'....I'm a pinch of this...some of this...add a little of that cook....but....it usually turns out no matter what.

I am not an expert at broccoli casserole, but I love Allrecipes for searches like that. Hope you can find a good recipe for you.

Sssshhh...it's not a "crunchy" recipe, but here is mine that I used to make w/ real chicken (pre vegetarian days) and now make w/ no chicken, soy chicken or tofu.

It's super easy to make....

Rice and Broccoli Casserole

1 pkg (10 oz) frozen chopped broccoli
1 cup minute rice
1 cup diced cooked chicken
1 can cream of celery soup (or cream of mushroom)
1 cup grated cheddar cheese
1 med onion chopped
1 cup milk

Place broccoli in 2 qt baking dish. Bake at 350F for 7 min. Remove and stir in other ingredients except 1/2 of the cheese. Sprinkle with the remaining cheese. Bake for 45 min at 350F.

I love this casserole. I forgot about how much I love it until your post.

I'll have to try both recipes out... I have soo been craving this stuff. LOL

Rondi~ On yours, do you cook the rice first?
And do you think it would be ok if I didn't add chicken?

No on cooking the rice - if you use minute rice. I haven't tried it with a "healthier" rice such as brown rice but I would guess you would want to cook that type of rice first.

You can leave out the chicken. I don't eat chicken. Sometimes I just omit it and othertimes I add Morningstar Farms chicken patties or nuggest cut into pieces.

Good, I've been trying to keep our lunches meat free... or close to it.

The kids can eat this and some pb&j tomorrow, because that's what I plan on making. (Provided I get off my butt early and go to the store. LOL)

Here's how I've done it in the past (not crunchy either, LOL).

1 can of brocolli cheese soup
1 cup (plus a little more) of minute rice
1 can of milk (use the soup can)
salt, pepper and paprika to taste.

I also add either fresh or frozen brocolli. Then I top with 2-3 frozen chicken breasts.

Bake at 400 for an hour. Then sprinkle with shredded cheddar and bake another 5 mins or so (melt/brown the cheese).

You guys just inspired me to go try a homeade cheese sauce so I could make this since we're low on food choices until payday but I have those 3 ingredients in the house. I am so excited that it turned out well since I have never made a homeade cheese sauce! Thanks!
