Birthday Cake

My son is turning 1 next week, the practice of giving him his own cake is just around the corner. I need an idea... cake low suxgar or no sugar.

everything else is fine just need something using natural sugars instead of processed sugars.

I am not a great baker

Help

here is one and I have a cookbook full of others

Golden Layer Cake

3 eggs, separated
1/4 tsp cream af tartar
4 tbsp honey(I use maple syrup)
1 tsp vanilla extract
2/3 cup sifted whole wheat pastry flour

1.Preheat oven to 350, butter a n 8 1/2 x4 1/2 inch loaf pan
2. In a large bowl beat egg whites until foamy and then add cream of tartar. Beat at medium speed of electric mixer until soft peaks form. Then, gradually add in 1 tbsp of honey. Beat at highspeed until whites are stiff, but not dry. Set aside.
3. Lightly beat egg yolks in a large bowl. Then gradually blend in remaining 3 tbsp of hone, beat for 5 minutes at medium speed or until thick and lemon colored. Add vanilla. Beat in flour. Beat 1/4 of egg whites and then fold in remaining egg whites. Pour batter into prepared pan and bake for 30 minutes, or until a wooden toothpick is inserted and comes out clean.
4. Remove cake from oven and cool in pan for 10 minutes. Remove from pan and cool completely on a rack.
5. Slice cake into 3 layers horizontally. Fill and a frost with Basic Honey Icing.

Basic Honey Icing

1/2 cup honey
8 oz cream cheese or 1 cup cottage cheese
1/2 tsp vanilla

beat all ingredients with an electric mixer about 5 minutes, until thick and creamy.

I like this cake especially with a buttercream frosting, but I don't have a recipe that doesn't have raw egg yolks in it.

Think I may make this cake for this weekend when my IL come into town...thanks for the idea!!!
