Dh made this the other day and it was SO yummy. My eldest two liked it and ate it (even though there was cooked food they could eat, so that's pretty high praise) but the youngest, 7, wanted nothing to do with it. And she's my raw carrot and bell pepper eater! Go figure!

Original recipe from

Blend these ingredients well in a blender or Vita-Mix: (Our blender worked fine.)
2 cups water
3 beets (Dh used one very large 6" diameter beet)
1 small root ginger, slice it first
3-4 cloves garlic
6-7 bay leaves (Dh did not use any bay leaves)
Pour mixture into a big bowl.
Blend the following ingredients for a short time, about 30 seconds:
2 cups water
2 carrots
2 stalks celery
2 T apple cider vinegar
1 T honey (dh used raw agave)
1/2 cup olive oil
sea salt to taste
Add 1/2 cup walnuts and blend on low speed very quickly, so they just break into small pieces but are not blended. (Dh used pecans as he didn't know we had walnuts.) Pour into the same bowl and stir.
Dice or grate:
1/4 head of cabbage
1-2 carrots
1 bunch parsley (Didn't have parsley, dh used cilantro which was really good in it.)
Add grated ingredients to the blended mixture. Stir and serve.
We topped our bowls with squeezes of lime juice and sprinkles of bird pepper. Dh and I both loved the cilantro flavoring in it, so much so that I can't imagine it without it though it's probably far from normal for borscht.
