Need help with vegetarian recipes....

we are making the switch! I need help coming up with some good recipes that have ingredients that have actually been heard of around here!

I also have to be careful cause I have to follow a diabetic diet too....

help!! please!!!

with a diabetic type diet, i have to really watch my carb intake....

does that help?

I am allowed carbs...but I have to watch how many...what kind etc etc

and I also have to eat more protein...esp at breakfast!

This might have too many carbs for you...don't really know

but my whole family eats this up whenever I make it. And, it's EASY!

Veggie Pasta Bake

Pour 1lb of pasta in a 9x13 baking pan. Any kind of pasta shape and type will work. Add 1 bag of frozen veggies. I like that mix of brocolli, cauliflower and carrots. Add one chopped onion. Stir in 1 can of spaghetti sauce (or your own if you make it) and one can of water. Sprinkle some cheese on top if you want it. Cover and bake at 350 for 60-70 minutes.

I like to add Italian herbs and garlic. Just throw some in.

For a meal, I serve cut up fresh fruit (whatever is on sale) and the kids have milk. Often, I serve a green veggie on the side.

Some of the above ones do have some strange ingredients probably not local, but others seem good. We also need to find recipes that include locally grown foods, sincec we do not have a health food or whole foods store nearby.
