I created this last night. It is super for a unique dinner soup. We served this with frehs veggies and ranch. Easy dishes
Anyway here is the recipe. Enjoy
In a large pot saute 2 garlic cloves and 1 chopped medium onion until golden brown.
CUBE 1 butternut squash, 2 potatoes and 2 apples and 2 carrots and a slice or 2 of ginger.
Saute with the onion and garlic for a few minutes.
Add 4 cups of chicken or veggie broth, 2 cups apple cider.
Bring to a boil, then simmer about 30 minutes.
Add salt and pepper to taste.
Puree in blender most of the soup. I leave some of the cubes in the soup for texture. Kinda fun to ahve something to chew, but you could puree the entire thing.
Gently reheat.
