suitable birthday cakes for the BIG *one*

does anyone have some good recipes for some cakes without sugar, wheat and dairy. i'd like to let my son dig into his own cake for his first birthday, but obviously, I don't want to sacrifice his health for it! i have some ideas, like apple cake, and squash or zucchini cake, but i need specifics. i know i can use rice syrup and flour, but i just gotta know how to put it all together.
all ideas are appreciated.

any ideas for a suitable icing, either? i don't know if that's going to work...???

Here are a few recipes I have saved, I haven't tried any of them but heard they're good.


Vegan Chocolate Cake

Cream in a mixer:
3/4 cup of soy butter (i love earth balance) and
1 3/4 cup sugar of your choice

Blend in a blender:
1/3 lb. extra firm tofu (5 1/3 oz)
1 tsp. vanilla
1 1/2 cup soy milk (or whatever kind)

Mix in a bowl:
2 cups flour (i like spelt cause it's light; low gluten)
3/4 cup cocoa powder
1 1/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

Mix the blended mixture and the flour mixture a bit at a time into
the creamed, alternating each. Pour into oiled and floured cake pans
(2 round) and bake at 350 degrees for 25-35 minutes. Toothpick test,
cool, and frost.

Vegan Chocolate Frosting
1 cup chocolate chips
1/2 cup raw cashews
1 tsp. vanilla
6 oz. extra firm tofu
1/4 cup maple syrup
1/3 cup water

Melt chocolate in double boiler or microwave. In blender, finely
grind cashews. Add 1/3 cup water and blend 'til smooth. Add tofu,
syrup, and vanilla; blend. Add chocolate; blend. Chill. This is a
chocolate mousse-y flavor and it's heavenly!!!


This one is for cookies but you could make one big cookie!

OATMEAL JUMBLES

2 cups organic rolled oats
1 cup organic dates - chopped
1/3 cup organic oil (like sunflower)
1 tsp organic vanilla extract
3 large ripe organic bananas - mashed well
dash of salt

Preheat oven to 350

* Combine all ingredients in a bowl until well mixed. Let sit for 15
minutes (for flavors to settle).

* Drop on ungreased cookie sheet (they don't spread so you
can put them close to each other) and bake for 20 minutes of
until brown

PS...these are best fresh so only make enough for a couple of days.

I would do a search at www.vegweb.com I made ds an icing free carrot cake for his birthday. he fed it to the dog...lol..but he also fed the crappy store made cake my Il's bought him to the dog too.

just wanted to let you guys know that i just used a basic vanilla cake recipe and subbed brown rice syrup for sugar, used brown rice flour, and i did use eggs. it was a disaster. i should have used one of your recipes!!!
