I am new to the AmityMama boards although i have been an advertiser on AmityMama for a couple of months now. . . just now getting the time to post. Okay, here's my question. . . I am looking for a recipe to rival Amy's (frozen entree version) Veggie Loaf. . . I would love to make this for my family. The ingredient list on the side of the box includes lima beans and lots of veggies like broccoli, celery, onion, etc. It comes with a pureed tomato base 'gravy'. . . and it is dairy free and vegan. I am not 'vegan' and do not mind dairy if it is needed in a comprable recipe that works.

You know i've yet to find a loaf that i really love. Mostly they are bland. Though I'm thinking about trying to convert a burger recipe into a loaf recipe.

--LOAF:--
1 lb. firm tofu, sliced, drained
1 c. cooked brown rice
3 tbsp. whole wheat bread crumbs
1/4 c. chopped onion
1 tbsp. oil
1 tsp. dried parsley flakes
1/2 tsp. ground sage
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1/4 tsp. garlic powder
Salt and pepper to taste
--SAUCE:--
8 oz. can tomato sauce
1/2 tsp. dried oregano
1/4 tsp. garlic powder
Preheat oven to 350 degrees. Lightly oil a 4x8 inch loaf pan. Place tofu in
a large bowl and mash well with a fork. Add remaining loaf ingredients,
mixing well. Place mixture in preheated pan. Press in firmly with the back
of a spoon. Bake 45 minutes. While loaf is baking, combine sauce ingredients
and heat in a small saucepan. Invert loaf onto a serving plate. Serve with
sauce.

okay...your post inspired me the other day. I went on the hunt for a super yummy tofu loaf recipe and I'll darned I actually found one that went beyond just good and edible it was down right YUMMY!!!! It tasted like a cross between traditional meatloaf and a stuff casserole of sorts. VERY GOOD...found it at www.vegweb.com here is the link..
How about this? I haven't tried it, but it looks good.
I've also made a tasty loaf with nuts and lentils, but I tend to serve the veg on the side. Would be nice to have it all together, wouldn't it? I'd think as long as you have enough moist stuff (egg/egg replacer, liquid) to bind together the dry stuff (gound nuts, bread crumbs, oats), that you could pretty much add whichever veg you'd like, much like making a burger patty. Anyhoo, here it is:
Veggie Garden Loaf
Serves: 6
1 tablespoon olive oil
1/2 cup onions chopped
1/2 cup zucchini grated
1 cup carrots sliced, steamed
1 cup broccoli steamed, flowerettes
3/4 cup oatmeal uncooked
1 bread slice of whole wheat, crumbled
3 tablespoons oat cereal bran
3 ounces cheddar cheese shredded
1/2 cup tomato sauce
1 egg
1 egg white
1/4 teaspoon each salt, pepper and sage
1/2 teaspoon thyme dried
1/4 cup parsley chopped
6 tablespoons parmesan cheese grated
1. Preheat oven to 375 degrees F.
2. In small skillet heat olive oil and saute onion until translucent, about 5 minutes.
3. In large bowl combine zucchini, carrot, broccoli, oatmeal, breadcrumbs, oat bran and cheese.
4. In small bowl beat together tomato sauce, egg and egg white, seasonings and Parmesan.
5. Combine all ingredients and stir thoroughly to mix.
6. Turn mixture into 9x5-inch loaf pan coated with non-stick spray.
7. Bake 30 to 35 minutes, or until firm. Let stand 15 minutes before slicing.
