wierd veggies for first baby foods

I am picky about to feed my 8 month old. he has only eaten brown rice in addition to breast milk, and we are ready to give more foods. however, we practice chinese medicine and this limits what foods we'd like to give becuase of the seasons and it says low starch veggies for the first 18 months...

my question is... why are there only a limited number of veggies that are available in jarred baby food? probably just because our culture does that... limits its diet to a few foods - but is there a problem with feeding your kids (at such an early age) foods like mushrooms, cucumbers, cauliflower, brussel sprouts, lettuce, cabbage, and other veggies besides the squash, peas and green beans norm?

i can't find any info?

Lucien never got jarred foods so i can't help you there but he eats what i eat (the little that he actually eats and doesn't just chew and spit out when the flavor is gone ) but i'm a vegan so 99% * of what he eats is what i eat.
he has eaten in no certain order
mushrooms, spinach, bell peppers, carrots, snow peas, cucumbers, squash, zuccini, cauliflower, broccoli, bananas, oranges, peaches, strawberries, peaches, rasberries, blueberries, yams, onions (yes he likes them) garlic cloves (cooked) , romaine
oh i'm sure there is more but that's all i can think of at the moment but beware broc, cauli, cabbage, and brussel sprouts are gassy veggies and could case your dc discomfort.

*the other 1% is the junk his father and maternal grandmother occasionally slop him

the only thing i found out is that mushrooms are hard to digest...

I have a friend in France, and she told me they actually have jarred pureed artichoke hearts as one of thei first baby foods. So I'd guess it's just our society that prefers the peas and carrots route.

You should get a copy of Super Baby Food by Ruth Yaron. It's excellent, she goes into detail about each fruit/veg, and how old baby should be before you start, based on digestion abilities, etc. Most of the book is about how to make your own baby food, but there are also a ton of ideas about crafts and recipes and fun things to do with your kids.
If you have a specific veg in mind, I can look up what she says for you.
