Question Got Yams Recipies?

I have 3 big yams, and don't know what to do with them. Anyone have a good casserole or other recipie?

I know this is late but this is an awsome yam/sweet potato recipe try it. I garauntee you'll love it.

CHILI CHILI CHILI CHILI CHILI!!!

Here's an awesome chili that you can make and serve on
top of sweet potatoes, SO nutritious!

Vegetarian Chili in Sweet Potato Boats

6 large sweet potatoes
1 TBSP olive oil
2 sweet green peppers, diced
2 onions, chopped
2 cloves garlic, minced
1 TBSP chili powder (or more!)
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/4 tsp pepper
1 can (28 oz/796 ml) chopped tomatoes
1 can (14 oz/398 ml) black beans, drained and rinsed
1 cup corn kernels
1/4 cup chopped fresh coriander or parsley
1/3 cup plain yoghurt (or soy yoghurt)
some lime wedges for garnish

Place sweet potatoes on baking sheet, pierce all over
with fork. Bake in 400 F (200 C) oven for about 1
hour and 25 minutes until tender.

Meanwhile, in a large nonstick skillet, heat oil over
medium heat; cook green peppers, onions, garlic, chili
powder, cumin, coriander, salt and pepper, stirring
occasionally, for 10 minutes.

Stir in tomatoes and beans; bring to boil. Reduce
heat, cover and simmer for 20 minutes. Stir in corn
and half of the coriander; cook, uncovered, for 5
minutes.

Place sweet potatoes on plates, slit lengthwise
through middle and mash insides with fork. With back
of spoon, press hollows in potatoes, spoon in chili.
Top with spoonful of yoghurt; sprinkle with remaining
coriander. Garnish with lime. Makes 6 servings.

my fav way to eat them (just had them last night, YUM)

peeled and cubed yams
1 clove garlic, minced
3 or 4 mushrooms, chopped
1/2 red onion, diced
1/2 tsp chili powder
1 tsp salt
2 or 3 tbs olive oil
a bunch of fresh cilantro
1 seeded and cored jalepeno (or leave the seeds in if you like it spicy)

mix all ingredients together and bake in a covered dish on 350 for about an hour.

you can add or subtract any of the ingredients, green peppers are yummy too.
