WTD with Tough Kale?

Hi all,
i got some hearty kale from our CSA and i doubt anyone of my family will eat it if it is as tough as it seems.

Any suggestions for prep, cooking it to make it consumable?

i don't really want to send it to the compost without trying!!

I make potato kale soup- a recipe from Laurel's Kitchen...pg160

1 onion
1 tbsp oil/fat
1 clove garlic
2 large potatoes
1 large bunch kale
5 cups hot water or stock

1/2 tsp salt or to taste
black pepper

Sautee onion in fat=until slightly golden
Add potatoes and 2 cups water. Simmer, covered, until potaotes start to soften at the edges. Meantime wash kale(soak in a sink or bowl of water. Remove stems...chop and steam. (don't try to cook with the potatoes...the flavor will be too strong)

When the potatoes are well done, puree half of them with remaining water and salt an pepper. Combine all and heat gently. Correcting consistency by adding hot water or milk.

Makes about 6 cups.

Even dh loves this soup...very cr3eamy even without milk. Chop kale very fine.

Do you eat dairy? I have a great recipe for scalloped kale and potatoes, but there's cheese and milk in it.
