just a few ideas that come to mind would be: smoothies, breakfast burrito's, polenta/grits

wanted to add that i didn't read the responses, so sorry if these duplicate what everyone else said. lol

if we have time we make breakfast burittos with some tofu, either scrabbled or cubes, gimme lean sausage, and some sauted veggie/greens, and ketchup,yum, ketchup...

if no time, i like whole grain or sprouted bread with almond butter, miso, and either jam or bananas/apples.

or a smoothie with spiruteen,

or chocolate

um...you can tell i am not vegan for health reasons!!

We've been eating these yummy sprouted grain bagels w/ Tofutti cream cheese lately. Those with a cup of java...my ultimate comfort breakfast from my college days. What can I say, I'm a NY girl who's gotta have her bagels, lol!

But for a healthier breakfast we usually have oatmeal with nutritional yeast and dulse or maple syrup and cinammon, whatever we're in the mood for.

I always try to have a fruit of some sort...we belong to a food
co-op and get produce bi-monthly so eating more fruits and veggies has been really easy.

When I was pregnant and nauseous all we had were smoothies! Frozen fruit, soy or rice milk, fruit juice, wheat germ, flax seed, and maybe a scoop of vegan protein powder. The boys loved them.

When company stays over I usually make a vegan coffee cake. I'll dig up the recipe for anyone who is interested.

we mix up the grains - millet is very tasty! - and eat hot cereals often.
and banancakes are a favorite - 1 C flour (whole spelt works or ub wheat too), 1 mashed banana, 1 cup vegan milk (rice,soy,oat), 1 tsp of baking powder - mix wet, mix dry, mix together, cook. Makes enough for my two children and one or two for me. You can double the recipe easily enough.

Vegan Coffee Cake

1 cup vegan milk of your choice
1 TBS apple cider vinegar
1/3 cup tofu
2 1/4 cups whole wheat pasrty flour
1 1/4 cups turbinado or raw sugar
3 tsp cinnamon
1 1/2 tsp ground ginger
1/2 tsp salt
3/4 cup canola oil
3/4 cup chopped walnuts (optional)
1 tsp baking powder
1 tsp baking soda

Blend the milk, vinegar, and tofu in a blender until smooth.
In a large bowl mix the flour, sugar, 2 1/2 tsp of cinnamon, ginger, salt, and canola oil. Using your fingers or a pastry knife mix until crumbly. Put 1 1/4 cups of this mixture in a small bowl along with 1/2 tsp cinnamon and nuts. This is the topping.
Add powder and soda to flour mixture along with tofu mixture from blender. Mix until smooth.
Pour into greased 9x13in baking dish.
Sprinkle crumb topping mixture over cake batter.
Bake in 350 oven for 30-35 minutes until tester comes out clean.

Breakfast at the Sunlight Cafe, by Molly Katzen, is all breakfast, 1 1/2 inches thick. Beautiful, yummy, thoughtful.

Oh, breakfast tacos are practically de rigeur here. Refried beans, or black beans, scrambled eggs, potatoes, cheese, bacon (fakon), rolled up in a tortilla, and topped with salsa. The salsa makes it good.

I like nasi goreng- fried rice topped with an egg.
