Favorite summer meals

I am thinking we need some different meal ideas...I have gotten ton of ideas from you all for winter meal ideas and now I have a large amount of meals I rotate through during the cool months. But, chili, soup, crockpot veggies, and other heavier meals just don't have the appeal during the 90 degree plus summer days. So I thought we could starta favorite summer meal thread so we could share some ideas...

I have 2 favorites for summer meals...

1. fresh corn on the cob, steamed broccoli,cucumber and tomato salad and fresh bread topped with homemade hummus

2. fruit salad, a light stir fry made of mixed cabbage and mushrooms with rice

please share yours!!

pasta salad is a big hit right now with shredded carrots, red peppers, black olives and some sort of sauce

quesadillas are a staple right now. I do plain cheese ones with a dipping sauce of salsa verde and beans. It rocks : D

boiled eggs are good for a quick protein pick-me-up and with seaweed and rice it's a traditional Japanese breakfast

nuts

I'm disinterested in food right now, much less cooking! I've been thinking about feeding Annabelle and I along the lines of the Super Baby Food diet, only minus all the puree bit.

We're doing a lot of fresh fruits and veggies and some popcicles. I need to do some smoothies, too.
