My Boys are almost 6 & almost 7.

I buy those 6 cracker pack thingies (20 cents or so per pack) and I put pretzels in individual baggies (1 lb bag of pretzels for 99 cents). I also bring a small cooler with bottled water & string cheese.

As for games, etc ... they bring NEW (never seen before) markers, crayons, paper, activity books, etc (though these things rarely get played with) along with their Leapster & Pixtar (which they have only had since last Christmas). Plenty to keep them busy for our frequent 9-10 hr drive to my mom's. They have been doing this frequent (every 3-4 months) trip since birth though, so they think its normal and are true angels.

I considered buying a portable DVD player, but they never complain so there really isn't a point to it.

I plan meal stops for when we need gas and we stop one or two other times for ME to stretch my bad back and for all 3 of us to go potty. I will also let them get a treat at this time ... an icee, candy, chips, etc.

There have been a few times we have stopped at Walmart or Target & spent 30 min - 1 hour there, for me to walk & pick up things we may need. This is rare & when my back is really hurting. Granted we are never on a time schedule.
