I recommend How to Cook Everything Vegetarian.

I don't own it (yet) but it is hands-down the best veggie (and just overall) cookbook I've found.

My meat-lovers as well as my vegetarian love the recipes I've copied down from it. The hummus and pizza dough recipes are the best I've found too. The best recipe in it is the Chili Non-Carne.

oh, thanks for the tip. i have "how to cook everything" - it's the book that taught me how to cook! i love how bittman writes recipes.

This thread is really good. I've been trying to incorporate more meatless meals into our diets for health and economic reasons. We'll never cut meat out entirely I don't think, but I'd like it to be more vegetarian with meat 2x/week instead of the other way around.

One thing I'm struggling with is most of the vegetarian my family likes is not exactly healthful. Lots of pasta and cheese, for example.

I'll be checking out some of the suggestions here for next week's meal plan I think.

my kids actually kind of stink in the vegetarian food they like, too. they're all ridiculously picky eaters, although at this point the oldest (almost 9) will force herself to eat stuff she's not crazy about out of pity for me when everyone else is complaining about the dinner i cooked.

for example - i made the honey-baked lentils a few nights ago. omg, they were soooo good! i mixed it up with brown rice and chowed down. did the kids like it? nope, none of them did. they all moaned and griped about it. i really hate mealtimes with my children. sad, but true. they take all of the joy out of dining together. i am not a short order cook and refuse to cook 4 different dinners just so everyone gets what they want. the result is 3 whining kids at dinnertime - really makes me not look forward to dinnertime. sorry...went off there. this should probably be in the steam room.

fwiw - my kids and dh (who is NOT picky) hate lentils, too

give it time - some things they acquired a taste for, others they just are unanimous and we don't buy them anymore
