Worm composting?

For those of you who worm compost (or have in the past), did you do a single tray? I was thinking of making a worm compost bin out of plastic containers but am not sure of the details on how best to do it. Many of the sites I've read about it mention having 2 trays.

I have pet worms! I only set them up about a month ago, but really it is a simple thing. I just have a rubbermaid bin out in the shade, drilled holes around the top for air, filled it with shredded newspaper that I made soggy (like a wrung out sponge) and then in I dumped the bucket of worms!

I do want to move them to a container that is more shallow with more area, because you bury food in a different place each time you add it. With our family we are just not having enough area to bury what we create, so I have to alternate between the worm bin and the traditional compost out back.

I plan to move it inside into the basement for the winter, and have the increased surface area of a shallower bin to allow us to compost everything via worms over the winter.

My mother has a worm bin as well (I bought her worms for mothers day, how sweet is that!?) because she lives in the mountains and they can't put food scraps in their traditional compost bin because it will draw in bears.

She actually got a sliding plastic drawer that fits perfectly in her kitchen cupboard. It is smaller than our bin, but it is just her and her husband so they don't need as much surface area as my family of 5. Her worms are quite happy too.

So, shallow and long, like a container for sweaters under a bead, would be best? I am waiting for a few books from the library I'm not really liking our tumbler composter and I think part of the problem is that we don't really have yard stuff for composting - just kitchen mostly and some leaves once a year.
