Where on Earth did you come up with 5 pounds of Date Paste? I have trouble finding even the tiny tins of it here.
Ummm, let's see. You could make home-made meal bars, like Luna or Odwalla bars. Those are frequently date paste based.
Or make pastry with date paste filling, rolled up. Like that German stuff that is sold around the holidays that I can never remember the name of...starts with the letter R.
You can add date paste instead of oils in most cakes or cookies to keep them moist without adding the less than desirable nutritionals of the oil.
Try some Morroccan recipes like Lemon and Date chicken, using date paste instead of the honey and whole dates.
Melt it into balsamic vinegar and add oil to make a really yummy dressing for salads.
Top a round of Brie with it, sprinkle with walnuts, wrap in pastry and bake till browned....mmmm, my favorite.
I love the Traveler's cookies from Leites Culinaria, and will use date paste in the place of dates in most cooking. I became somewhat of an addict while living with my Syrian roomie in college.

Date paste makes wonderful cereal bars, good breakfast cookies, and great muffins. I will see if I can scrounge up that old one my mom used to make... she had Senna leaf, date paste, prunes... all sorts of good stuff for regularity. lol...

1 1/4 cup raw almond butter
1 1/4 cup raw carob powder
1/3 cup honey
Mix and press into 9 x 9x square (pyrex) pan. Refridgerate at least one hour. Cut into squares.

* 1 lb dates = 1 cup date paste. Can use green life/green power or champion juicer with blank screen to make paste. (or purchase date paste)
You might be able to try soaking the dates in warm water to soften then mashing or chopping into a paste. I've never tried it and it might be a lot of messy work but I'd do anything for bRAWnies!
You can also mix date paste and toasted sesame seeds, spread on a cookie sheet and bake to make those delicious sesame bars that are like candy. Sort of like peanut brittle, but with sesame seeds instead of peanuts. You might need a thinner sugary thing, like honey or maple syrup to thin it out. I've never made it, but I eat enough Oskri bars that I'm thinking about figuring out how to make them myself.
i have used dates i made into a paste (in hot water and blended) for taking my homemade granola and making it stick together into bars or squares as a to-go snack....
and here in arizona they make lots of date milkshakes .... so good!
