Going pesco-vegetarian. Veggie mamas, what do you feed your kiddos

for lunch? I need non-meat ideas. Oh, and peanuts won't work.

peanut butter and jam sandwiches



OK really, pasta with various veggies, warm or cold like pasta salad
other sandwiches~ egg, cheese, sprouts- hummus, lettuce and tomato- tomato soup and grilled cheese.
leftovers from dinner the night before...

The most common lunch around here is pinto beans and corn tortillas for DS#1, and bean broth, corn tortillas, and quinoa for DS#2. DS#1 almost always has tomatoes at lunch, and perhaps some avocado or cucumber, if we have it. DS#2 usually chooses a carrot as his raw veggie for lunch. Sometimes they'll mix it up and have brown rice tortillas with non-hydrogenated Tofuuti cream "cheese", but day in day out they want the beans and corn tortillas. It's their PB&J. I make a pot of pinto beans a few times a week.

Of course, we're doing vegan and gluten free, so sandwiches are nearly impossible (DS#2 hasn't met a GF bread he's liked).

BTW, if one reason for going veg is the veal issue, you might want to think hard about dairy. (http://www.factoryfarming.com/dairy.htm)

Hummus and Carrots or pita bread

Black bean dip and chips

yogurt and banana with a granola bar (or some granola in the yogurt)

bowl of beans and tortillas (quesadilas if you eat cheese)

Pasta with veggies mixed in and a little white sauce with brewers yeast

vegie plates with curry dip

Artichokes (a fav around here right now) with curry dip

top ramen noodles (no sauce packet) with gomasio and fried tofu mixed in

Miso with rice and avacado rolls

Yakisoba noodles with peanut or almond butter sauce (this is good cold)

Baked sweet potatoes with a little brown sugar

Baked potato with everything else (those little fake soy bacon chips are good on stuff like this)

I will think of more.
