Mama, I am not a complete veg. I eat tons of veg tho.

I was hoping a true vegetarian would come to the rescue.

I know you have to be mindful of the nutrients you will obtain from a veg diet.

Vitamin B's seem to be of concern if I remember right, but I think Nutritional yeast can help supplement that.

I hope a real seasoned veg that has doen this transition can come to the rescue

Well, I am a seasoned veg, but I was born into this, so I never put much thought into it, really. So I don't know how much help I can be!

The B12 and iron are the most important. Oh, and calcium if you are going vegan. But they are all easy to get in your diet with a little planning. I am brain dead right now from a cold, but if nobody has given you any good ideas by the time I wake up, I will try again!

FWIW, I never make any effort to cook anything but a good, well rounded meal, in terms of presentation and taste, and my family has always come up in blood tests as not deficient in anything.

If you go over to the veg forum, and read old posts, there have been a few people who have asked the same sort of question as you, and have received a lot of good responses, so maybe you can glean some good info from there.

HTH!
