I'm struggling with buying better food for us but it's so expensive where we live that it could easily almost double our grocery bill. It's hard sometimes b/c I won't eat any kind of fish, my husband won't eat port, I won't eat any cooked beans, he won't eat them as a meal and I'm not big on cooked vegetables (LOL) We usually have something like baked chicken/rice or potatoes, and veggies. I'll eat mine raw and cook them for everyone else. I'm also needing to get back on ww's so that makes it hard with lots of meal and I'm just not a veggie person. I'd love any suggestions.

Are there any veggies you truly like?
This is not a fair reply becuase I love veggies.
Here is a beautiful and quick stirfry...
Mince a clove or two or four of garlic and quickly cook in a couple tablesppons of oil-I use coconut.
Throw in a pinch of crushed sweet basil.
Add some sliced daikon radish, cabbage, zucchini, onions, peppers, or whatever you like. Then squirt a couple squirts of Braggs Amino's in there and FABULOUS! My kiddo's devour it.
We eat alot of salads. You can make fabulous homeade dressings like tahini or oil and vinegars, or get some of Annies (goddess and asian sesame are to die for)
My children will gobble up salad becuase they think it tastes so good with dressing.
Have you tried new things like lentils or couscous? You can make couscous in like 10 minutes and it is a great side dish..kinda like pasta, but little balls.
Lentils or green beans can be turned into a fabulous soup in a matter of an hour start to finish. Add some homeade corn muffins or a loaf of bread and that is livin!
Maybe start trying a few new things here and there. Tabouli, spinach dip with raw veg, things like that. They are healthy and fun sides for your meal

I'd start really low key. Mixing whole wheat and whole grains with what you already eat. Crusty warm whole wheat bread goes down easy. My kids gobble that up. Big bright salads with tiny bits of cheese helps some folks enjoy salads. No mushy tomatoes, however. Ick. Shredded carrots, crisp peppers etc. A really nice simple mix of olive oil & red wine vinegar dressing with a bit of salt and pepper is very refreshing and healthy.
Try roasting veggies-- they are very sweet. You can put them in a pan or lipped cookie sheet lined with foil (easy cleanup). Pour a bit of olive oil on the bottom and rub your veggies in it- sweet potatoes cut in half, say. Sprinkle a bit of salt and pepper, toss in some unpeeled garlic cloves, and cover with foil. Put in 400 degree oven for about 45 mins- to an hour. You can also sprinkle rosemary on top. You could roast potatoes and carrots as well. It will be a lovely, sweet, carmelized meal comfort- food- sort- of -dish. I saw something similar to this on Fast Food My Way and the chef added sausages in with the veggies-- all in one pan. I have seen chicken sausages by Wild Harvest, so that might be really good. I've never added meat to my roasted veggies before, but I might after seeing this lol.
Grilled veggies are also nice. Unless my grill has snow on top, I use it. I have done all sorts of veggies on it, but I esp love grilled asparagus sprinkled with salt, pepper and lemon juice. I rub olive oil on the asparagus and pop it on a hot grill. Wait for those nice grill makrs and then tuirn. It takes no time at all. Transfer it to a plate and add the seasoning.
There are many ways to enjoy veggies and too many people grow up having been served over-cooked, mushy, and bitter veggies.
Other easy ways is to serve whole versions of familar things. Brown basmati rice insterad of white. This is a very light rice. Organic yogurt with lesser amounts of sugar- we like Brown Cow and Stoneyfiled farms. Popcorn instead of chips, homemade oatmeal/choc chip cookies instead of oreos etc. (I only put about a third of the bag od choc chips in my cookies, my kids don't think twice about it). My kids love whole wheat Newmans pretzels and nut butter as a snack. Or whole grain crackers and a small amount of cheese. Whole wheat bagels and bagel chips are also snacks my kids enjoy. Better, and prob not more $ than Doritos, ice cream, Chipsahoy etc. (Not saying that's what you eat, and not even judging the food, just I know these things are not cheap).
Also, add more fruit choices. Frozen strawberries, blueberries (esp great in pancakes), even canned pineapple in juice are good choices. You can make smoothies etc. Make sure the apples you buy are fresh & crips-- nobody likes a mooshy apple. lol My kids love kiwi and sometimes kiwi is really cheap.
Thanks ladies. I guess I was wrong, I will eat some stir fry I just honestly don't like vegetable cooked really. I eat peas, green beans, carrots, cabbage, broc & cauliflower all raw. I've never liked cookies veggies. My mom truly believes it was b/c when it was time for baby food the dr's were saying give fruit first and she believes that I liked that sweet and when she tried veggies I was like no way (LOL) I have tried veggies in different ways, just don't care for them. I do make stir fry and I'll put onions, peppers, carrots, mushrooms and tomatoes in it. Thanks for the suggestions
