I use a couple basics a few times a month:
Potato curry
Potatoes, onions, curry powder (about 2-4 tsp), ginger (just a few shakes), a mashed garlic clove, a few shakes of turmeric, and enough water to cover it all, and then let it cook all day on low, when I get home in the evening, I throw in frozen peas (they stay sweet if you throw 'em in at the end) and turn it up to hight, then just before service, put in some cream or half n half -about 1/2 of one of the small little cartons. Cook some rice with that, and ladle it on top, it's yummy.
Veggie soup:
I use boullion cubes, because I have a lot, but you can use a more healthy choice like organic vegetable broth or something, potatoes (cubed), celery (chopped aout 1/2" thick), baby carrots (throw them in whole), a handful of brown rice or risotto, and let it cook on low all day.
Beans
Any kind of beans (dried) with a bay leaf or two, some cumin (about a tsp) just a bit of pepper, garlic, 1/2 an onion and water to cover it by about 1 1/2 ". Cook on low all day, and about an hour before serving, turn up to high and drop in a bunch or eggs. It may sound gross, but I was shown that trick when visiting some friends, and the eggs after cooking all the way through are freakin wonderful. Put in enough for at least one for each person. and don't stir. They will cook through in an hour or so.
