Food question

I have to occasionally eat sugar-free things for my diet (south beach) and I don't want my dd eating any of them, so I have to come up with substitutes for her when she wants a taste. My current dilemma is pudding.

She LOOOVES pudding but I hate to make/buy those jello ones. I looked through my 3 healthy/natural cookbooks and couldn't find a recipe for chocolate pudding, only rice pudding, which I will make at some point. Does anyone know how I would make a natural chocolate pudding?

In addition to the choc. pudding recipe I posted here yesterday, I also sometimes make this:

2 T. Cornstarch
2T. cocoa
2c. Milk
1/3 c. maple syrup

Stir and cook over med heat until thickened.

I have made this with rice milk, and I imagine it would work with soy if you use those instead of dairy.

Let me know how the pudding goes. My 3 1/2 year old loved it, but my 6 1/2 year old wouldn't eat much, and he didn't even know there were avocados in it....Maybe with more syrup instead of less. I'll be honest and tell you my nose has been stuffed for about 2 1/2 weeks, so my taste is a bit off. Maybe it's just plain horrible and I don't know it!!! But, I am guessing it is more because DS is a dairy addict.
