Fast, easy, healthy, cheap menu ideas?

Can you guys help me...again (man this new mam is needy).

I am trying to make a two week meal plan so that I stay on budget and healthy.

I am not a morning person so bfast is probably the hardest. Lunch is hard to b/c after ds gets home from school its like mad dash to get lunch on the table.

Dinner not so bad b/c I like to cook, but i would love some ideas that I wouldn't have to have meat thawed out. (dh is a big time meat eater) I like it but don't need it. And would prefer the kids didn't eat it.

Some snack ideas helpful too. I am pretty lazy so these have to be quick and easy ideas.

I get organic oats from my local HFS for 85 cents a lb. Takes 5 mins in the microwave, and with a little sucanat, cinnamon & milk, my 5 & 6 yr olds gobble it up. Also I sometimes make up a huge batch of whole wheat muffins with whatever I have on hand (apples, raisins, blueberries, etc) ... and leave them out in a ziploc for the boys for breakfast.

Not as healthy breakfast alternatives .... bagels from a bread outlet frozen in freezer bags of 2 or whatever, taken out of the freezer the night before or microwaved for a few seconds ... healthy generic cereal.

Lunch for us is usually leftovers or natural PB (Teddy brand) & jelly (100% fruit) on whole wheat. Pssssst, I sprinkle wheat germ on the PB Shhhhhhh

Fruit for breadfast is a no-brainer here, also bagels and cereal.
for lunch maybe make sandwiches to have ready when they get home from school

You can also crockpot oats. We make ours with half milk/half water (that's how you do it in England) and it tastes a lot better than straight water. We like to add frozen blueberries to our, or mashed overripe bananas with chopped nuts on top.
