GFCF recipes from my HFS :)

Ok said I would post tonight but gonna do it now

Gluten Free Flour Mixture

Use this in place for any white four for any recipe.

3 cups white rice flour
2 cups arrowroot starch
1 cup gluten free baking mix
1 cup soy flour
2 packets unflavored knox gelatin

Chocolate Chip Walnut Cookies

Recipe by Dawn Radatti

Gluten Free, Milk Free, No Butter, No egg yolk
yield: approx 36 cookies

2 1/2 C Gluten Free flour mixture
1tsp baking soda
1/2 tsp knox gelatin
3/4 C. softened soy margarine (I use willow run soy margarine)
2 C. raw, unrefined sugar
2 tsp. vanilla
2 large egg whites
1 C. chopped walnuts
1 12oz bag dairy free chocolate chips

In medium bowl, combine flour mixture, baking soda, knox gelatin, set aside

In large bowl, mix butter and sugar with electric mixer till creamy

Add Vanilla and eggs, mix on low until well blended

Gradually mix wet ingredients into the dry ingredients

Stir in nuts and chocolate chips

Drop by heaping teaspoon onto baking sheet and gently and slightly flatten with a spatula

Bake at 375 for 9-10min. Cool on wirerack. Theses cookies taste even etter if you can wait at least 1 houor before eating , giving the flavors a chance to blend.

I am going to scan these other two cause my hands are hurting and this keyboard sucks lol
