I have four of them... yep, they were given to me yesterday as I bought some farm apples... they wanted to get rid of them and asked me if I wanted carving pumpkins or pie pumpkins... I said pie one... and they gave me four! LOL!
Sooo... what do you do with them? I know you can roast them like spaghetti squash (baking dish with water) ~ but... once you scoop them out, do you eat like it is or.... can I use to make Sandi's muffins? LOL! Give me some ideas...
Do they have a lot of seeds? I imagine not....

I just cut them in half, put a little water in them, bake for about an hour at 350. Peel, puree and freeze. Use like you would any canned pumpkin! Of course you can make muffins with them.
