well vegan mac & cheese didn't pass -- ideas?

I did the mac & cheese from the vegan planet cookbook - I didn't have lemon juice or nutmeg like I thought I did til I was making the sauce part but I don't think the little bit would make that much of a difference would it?

it stunk while cooking imo but tasted better then I expected but still couldn't eat a lot of it (like 1/4 cup worth and taking bites of large steamed broccoli at the same time ) , and Caden took 2 bites and said it was not good at all - one bite to prove to me that it wasn't good, I had to watch him eat it and make the faces LOL

so now I have a big ole pan full of it ... should I put it for free on craigslist LOL that and vegan sliced cheese not a hit at all ( that I don't blame him nasty! )

is there some kinda cheese powder I can sprinkle on noodles? or? what would you suggest I try next?

well, adding a little mustard to vegan mac n cheeze makes it taste more like my mom's recipe for mac and cheese, which helps in selling it to my kids. but... the easiest thing would be to just not make "cheese" foods for a while.

ya that would probably help lol too fresh on his mind what the real thing tasted like

I'll squirt some mustard into a lil bit and see what happens thanks for the tip!

GREAT SITE JEAN!!!

I needed some more DF recipes! I wish the grocery store had wi-fi so that I cold just go around looking for ingredients. MMM...i am going to try that mac n cheese. i hope DS likes it!

That's what I was going to say. It's a lot easier (and cheaper) to just find different foods for awhile, rather than try to recreate favorites. Soy cheese isn't going to taste like dairy cheese. Ever.

But eventually you forget, and your tastes can change. It happened for me when I went gluten free.

Yeah before offering cheese substitutes (especially his favorites) you need to detox him from cheese, because substitutes will never taste the same.

I have everything but turmeric so I'll pick that up this weekend and just have it on hand - I seriously need to stock or restock some new spices in the house

thanks for the site link! I was emailed a cashew cheese recipe from someone off craigslist ( ya I had someone pick up the mac & cheese today lol made them happy ) .... she said its great on pizza and crackers ... dunno have everything in the house so gonna give pizza a whirl this weekend

and next week lots of soups and such that we know what to expect I totally know not to go in trying something thats totally new to me let alone Caden and expect things to be a hit right off... though he totally loves tofutti cuties ( very special treat that is TOO good for mommies sake so um they won't come back in the house for awhile lol ) and he likes the tofutti better then sour cream, and is happy to take his soy milk ...

made the mac n cheese form the site and we all really liked it. i did not use tumeric or some of the other ingredients.

also made the blueberry oatmeal bars - MMMMMmmmmmm!!!

what did you cut out?

are you already accustomed to nutrional yeast or miso or any of those things?

share what recipe you put together so we can compare LOL ppplease?

i used vanilla soy milk, should have used plain but didn;t have any, and left out the miso, turmeric, no nutritional yeast or tahini, no cayenne pepper and I used regular paprika, not smoked.

We ended up adding more paprika and some plain ol' yellow mustard at the end. I will try it when I get the other ingredients but I wanted to give it a shot today.

and with the bars I actually used pie filling instead and used a little extra water since I didn;t have agave nectar.

alrighty! will maybe whip some up for lunch tomorrow and see what happens without those items thanks for your input on whatcha did

I have both plain n vanilla ... I've wondered what vanilla would do for taste lol

As others have said, you need to not have any cheese substitutes for a while to be able to appreciate them. Having said that, you could try some recipes from "The Ultimate Uncheese Cookbook" by Stepaniak. It is my favorite cheese-like cookbook.
