Gluten-free crust idea please

I am craving pot pie. I love pot pie. But, I have never been able to do a pie crust or biscuits well since going gluten-free. Any suggestions or tried and true recipes. I miss pot pie so much. TIA

There is a great biscuit crust pot pie in one of the Gluten Free Gourmet books.

Here we go, from the revised original GF Gourmet

Buttermilk Biscuits
3 T shortening (i use butter)
1 egg
1/2c rice flour
1/3c potato starch
2 t baking powder
1/2 t baking soda
1/2 t salt
1/3 c buttermilk

mix wet, mix dry, mix together, plop on top of pot pie, bake. Yum.

Oh, and that frozen pie crust from WF - my family picked the quiche out of it and left the crust...

Thanks. I will have to try the recipe. We don't have a WF in driving distance no matter how good it might be. It sucks. I wonder if I could use the pizza crust I have? Naw, it would be the same.

I know I've seen a gf pot pie made with potato. Mashed potato I think. I don't know though if that would work on top of the pie. Maybe add something to mashed potato.

This one uses corn meal and rice flour.

I made a pot pie last year using the gluten free pantry pie crust mix. It turned out really yummy!

It is my opinion that I am a good mama to three good kids. I also think that I am kind and compassionate. I would also add in PASSIONATE- but that would only be my own personal opinion.
