ok GF mamas - wish us luck - its our first GF meal lol
I went to Sprouts because my boss said they have a bigger selection than our little trader joes by us and better prices. I spent too much, but I knew I would lol.
Tonights dinner will be DeBoles rice spaghetti style gf pasta with homemade spaghetti sauce and meatballs made w/gluten free faux bread crumbs from my new recipe book. With cauliflower on the side. Pray with me? lol
Am going to try to make our "normal" meals with substitutes for a few days and then slowly work in new stuff. I got quinoa on clearance 99cents a bag which made me happy tho the 2 boxes of cereal for $7 made me hyperventilate a little lol
Just keep reminding me to breathe and tell me I'll figure it all out ok?

We eat Tinkyada here and it NEVER takes as long as the package says. I start testing about 4 minutes before times up. Another thing is use a LOT of water in a BIG pot, it can get very sticky and mushy very fast. As soon as you drain add the sauce. Sorry to say DeBoles was not our favorite because it does kind of all stick together. This is a learning process, you can do it.
I actually like the DeBoles. I cook it for about 6 minutes. Make sure water is good and boiling when you put it in and stir fairly often.
For cereals, check for General Mills Disney line. On another thread it was mentionted that BIg Lots has them and I found Tigger and Pooh cereals at Walmart the other day for $.75 - not marked. The price was still marked $3.

can you tell I"m a little excited?
This whole weekend will be completely gluten and casein free for him. Then Monday I'm going to send in a baggie of cereal and a bottle of soymilk for the snack/breakfast at school until we see whats going on because apparently he ate 3 eggs this morning and still ate lucky charms with milk at school. ugh.
The meatballs were great - dh followed my instructions lol and they turned out perfect. He evens slipped mushrooms into them as I suggested in tiny little diced pieces and even Zoey didn't notice. He made the homemade marinara since I wasn't sure if jarred sauce was ok (I think it is but homemade is so much better). Roman ate his entire plate with me helping feed him at the end.
Desert was ktoos for him (told him they're special oreos) with vanilla soy milk for dipping. He LOVED them and drank most of the milk even. Said its "sweet milk". Zoey (and her sleepover friend) ate cherry wafers and were just fine eating something else. I told Zoey the new foods are to help Romans belly and everyone was just fine with that since everyone knows he gets belly aches sometimes (which we're hoping this will help too)
So other then the school breakfast today was a gf cf day - I'm absolutely so relieved and hopeful that we can do this.
Tomorrow dh and I are going to peel and cut potatoes and fry them in the deep fryer, cool, bag and freeze. I'm going to make my homemade chicken soup with rice instead of pasta or matzo balls and freeze small tupperwares for when they want soup for lunch. And tonight when it cools a bit more I'm going to try my hand at some gf baking. I didn't buy the xanthan gum today, but I found a recipe in the book for Mandel bread! Good chanukah cookies. they take GF flour, which I did buy - eggs, oil , sugar, salt , vanilla, cinnamon. I have all that and haven't made Mandel bread in years!
Ok - I'm getting excited lol. A new addiction for me?
This week I'm going to try the Potato Kugel recipe and sweet/sour meatballs are on the list to try this week

I'm so glad it's worked well for you today. I think the first day of something new can be the hardest. Sounds like you have a good plan to cover his meals for the week ahead.
