need allergy free lunch ideas

Trying to plan out my menu and I can't think of anything that we haven't had over and over and over for the past few months. I want something different.

DD is allergic to pnuts/treenut, wheat (and oats -anything in the grass family) gluten, shellfish, soy (multiple legume family allergies), milk, chocolate, kiwi, bananas, avo, and thanks to pollen she's reacting to a lot of fruits and veggies right now that she's not really allergic to.
She does OK with corn and eggs, but I think she may be having some problem with yeast.

things we've been eating:

chili and fritos
tostadas
gf chicken noodle soup
eggs
rice and veggies
ham on rice cakes
left-overs

I just made GF crepes for breakfast yesterday to have with strawberries, and then for lunch today dd had pizza rollups in the leftovers. I'm sold - they're a great bread alternative. You could do ham crepes, sunbutter & jam, I am even going to try one burrito style with beans and rice. (They're also great with lemon curd as a snack).

Erik's standard is pb and j on rice bread. But he'll also do sunflower seed butter, or just a jam sandwich. I often make a nice soup with chicken and lots of veggies and pack it in a thermos.

He's sooo easy, though, because he likes the same thing every day.

I'd do gluten/wheat free tortillas (I'm obsessed with tortillas) and do easy quesedillas, wraps or ez-pizzas. Yogurt parfaits unless she's allergic to all dairy. And I'm sure I'd just have to do a lot of brown rice with eggs and veggies.

I usually have the basics prepared and then combine them to make different dishes (DD vegetarian, so no eggs or meat for her):

Boiled quinoa

Boiled millet

Boiled buckwheat

Millet flour (make it in my coffee grinder)

Chopped bell peppers

Broccoli

Cauliflower

Spinach

Rice

Tofu

Nuts / seeds

Fruits and berries

Beans

Then

- thin millet crepes that double as wrap / pita for cheese and spinach quesadias

- Fried cauliflower

- Veggie wraps (either above millet or TJ's rice wraps) with stir-fried bell peppers and beans

- Buckwheat with a little coconut oil + raisins + sunflower seeds
It can be made in a wrap too

- Stir fried veggies and rice

- Fried tofu - fry the cubes in the coconut oil, add maple syrup when slightly chilled

I'll add more if I think of anything.

Oh, I make my own rice milk and almond milk to have with whatever
