Quiche Recipes

I've never made quiche before, and I was wondering if it's hard to do. Anyone have a foolproof recipe?

I ususally do no crust. The one I made last week was just eggs scrambled (I think I used 9) and poured over cheese, broccoli (frozen pieces), and diced ham. I've made lots of kinds, whatever I have on hand.

I wanna use up some sliced ham that we have, and we also have pea's. I've only ever had spinach quiche.. should I throw in the pea's or leave them out?!
