how to use leftover BBQ chicken

BBQ chicken sand would be redundant so what else can I make tonight? I have 4, maybe 5, BBQ drumsticks.

I seem to be having a hard time with leftovers lately

mmm as a kid my mom made bbq beef cups--- you press biscuit dough into a muffin tin , fill it with a beef and onion mix and top w cheese. I see no reason that you couldnt do this with chicken.

Other thought is some sort of casserole, maybe some sort of mex/texmex? tamale or the like?

I make fajitas out of them. Just saute an onion, and a green pepper... then toss in the meat, striped off the bone. Roll in a tortilla, top, and go.

shred it, put on top of baked beans, top with cornbread mix an bake according to the cornbread directions.

lol i actually didnt mean onion soup, I meant a diced onion-- its bbq sauce, diced onion and beef usually

We do this with the onion mix. We call them barbie cups. I think it would be really yummy with bbq chicken cut up.

making the beans. i didn't feel like making a crust for pizza BUT i got sidetracked with all of my wonderful help in the kitchen that I poured the cornbread batter ontop w/out adding the chicken!! So I was shoving chicken down the sides, lifting up the batter and sliding chicken in, and well, doing the best I could to get it under the batter!!! Oh well, it all tastes the same it just might not look very pretty but it smells oh so good!!

Oh, i had canned white beans so I made those into baked beans.

mmmmm! now i want to make bbq chicken just to have leftovers.

last time i had bbq chicken leftovers i made quesadillas with sour cream an extra bbq sauce on the side. it was yum!
