Easter leftovers - what to do

I am making split pea soup today with the ham bone and some chopped up ham

I think I will cube the rest of the ham and freeze for omlets, soups, etc...

I also have mashed sweetpotatoes that I need to use up. We could eat some this week but I am not sure as to what with as there isn't much to choose from (unless you can suggest somehting and I have an AH-HAH moment!)

Can you freeze them and thaw and reheat? Isn't there somesort of sweetpot soup I could turn them into? Or freeze and make ti later?

i know there is a sweet potato and black bean burrito recipe lurking around here somewhere. Other ideas are sweet potato casserole (with pecan and brown sugar topping, not marshmallow), sweet potato pie, using it as the topping for some sort of shephards pie

I've heard of people using sweet potatoes to top a shepherd's pie. That sounds yummy. Or what about sweet potato pie? Or even pumpkin muffins with mashed sweets instead of the pumpkin.

You can definitely freeze and reheat them, though. We do that all the time.

Hammy stuff - omelets, quiche, scalloped potatoes and ham, scrambled eggs and ham, barbecued ham sandwiches, ham/potatoes/green beans, umm - that's all I've got off the top of my puny brain today.

I was hoping to try something ELSE but know that you said muffins I won't stop thinking about them!!!

got it heather!

3-4T. water
1/2 onion, chopped
2 cloves garlic, minced
3 cups black beans, drained and rinsed
1 cups water
1.5 tablespoons chili powder
1 teaspoons ground cumin
2 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
1 1/2 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes (sometimes I use refried beans)
16 (10 inch) flour tortillas, warmed
8-12 ounces shredded Cheddar cheese
salsa
1 1/2 c. brown rice

DIRECTIONS if eating immediately:
Preheat oven to 350 degrees F (175 degrees C).
Heat water in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese, salsa, and brown rice. Fold up tortillas burrito style, and place on a baking sheet.
Bake for 12 minutes in the preheated oven, and serve.

Place baking sheet in freezer and flash freeze burritos. When frozen wrap in wax paper or plastic wrap and then place several in a freezer bag.

To eat, remove from freezer and thaw for an hour or so. When thawed either microwave for a couple of minutes or bake at 350 degrees for 12-15 min.
Bake for 12 minutes in the preheated oven, and serve.

I think we will have these this week. though I might omit the rice so that I don't have to cook it! I need fast fast meals this week. oh and I am not doing cheese right now but that is no biggie. I think they sound YUMMY!

We have some sliced for sandwiched, cubed for putting in mac and cheese, tuscan bean soup and a bone for split pea soup.

Those sweet potato burritos look super yummy! I was gonna say muffins w/whatever's left of 'em. ETA: You could freeze them a cup per bag or jar for later use in muffins, too.
